Breakfasts Burritos

D. has started requesting hot breakfasts for half the week, instead of just eating cold cereal.  So today I decided to make a simple breakfast burrito.


First, I prepared the ingredients.  I cooked some scrambled eggs, cooked 1/2 lb. ground sausage, and cooked some Simply Potatoes diced potatoes.





Then I mixed the eggs, sausage, and potatoes together.


After warming 2 tortillas for about 15 seconds (just enough to be able to fold the burritos without ripping the tortillas), I put a couple of scoops of the filling on the tortilla.


Then I put some ketchup over top (you could also do salsa), and a pinch of cheese before rolling them up to eat.



These could also be made ahead and frozen.  Just be sure if you are freezing you fold both ends in, and wrap with plastic wrap or aluminum foil before freezing.  Reheat for about 2 minutes in the microwave or about 10 minutes in an oven at 350 degrees or until warmed all of the way through.

Breakfast Burritos
Ingredients:
6 Eggs
1/2 lb. Ground Sausage
1 bag Simply Potatoes Diced Potatoes with Onions
4-6 tortillas (10 in.)

Steps:
1.  Cook eggs, sausage, and potatoes separately
2.  Combine eggs, sausage, and potatoes in a large bowl and mix well to combine.
3.  Heat tortillas for 15 seconds for every 2 tortillas.
4.  Place a couple of scoops of the filling on each tortilla.  Top with salsa or ketchup and cheese.
5.  Roll and enjoy!
6.  IF FREEZING:  Follow instructions above and wrap in plastic wrap or aluminum foil.  TO EAT AFTER FREEZING:  Heat desired number of burritos for 2 minutes (individually) in microwave or in the oven for about 10 minutes at 350 degrees, or until warmed all of the way through.
