I have heard that the healthiest way to eat is to eat all the colors of the rainbow. I decided to make a salad that had almost every color of the rainbow. I love lettuce salads because they are so easy to make and you can make them different every time if desired. This particular salad is full of vitamins and minerals. It is almost a rainbow with red, orange, yellow, and green.
Almost Rainbow Salad
Ingredients:
Spinach
Shredded Carrots
Yellow Bell Pepper
Cherry Tomatoes
Steps:
1. Chop or thinly slice bell pepper.
2. Place desired amount of spinach on plate. Top with bell pepper, carrots, and tomatoes.
