Mini German Pancakes

I recently came across an idea on Pinterest for Mini German Pancakes. They were so cool because instead of being cooked in a 9x13” pan like I'd always had German Pancakes, they were baked in a muffin tin, and made little bowls. We decided to try it out and it was a perfect little breakfast. After they were cooked, we topped them with Strawberry Pie filling and Whipped Cream. It was like having dessert for breakfast, and who wouldn't like that?


Mix together all ingredients.  Grease each muffin tin well.  Divide batter evenly between 12 muffin tins (about half full).  Bake at 400 degrees for 15 minutes, or until puffy and golden on top.  Serve with fruit topping of your choice, syrup, or simply powdered sugar.

Mini German Pancakes

Ingredients:
3 eggs
½ cup milk
½ cup flour
¼ tsp. salt
½ tsp. vanilla
1 Tbsp. butter, melted

Steps:
1. Preheat oven to 400 degrees. Grease muffin tins well.
2. In a blender or large bowl, mix all ingredients.
3. Divide batter evenly between 12 muffin tins. Bake for 15 minutes, or until puffy and golden on top.
4. Serve with fruit topping, syrup, or simply powdered sugar.
