This was a recipe that I found on Pinterest. I
changed it up a little bit, and we ate it along with some barbecue
chicken that I made. Such a healthy casserole, and it could be a
meal on it's on if you want to keep it extra healthy and have a
vegetarian meal.
First you need to cook your spaghetti squash and slice your tomatoes. (See post on 2 January 2014 to learn how to cook and
prepare your spaghetti squash.)
Then spread half of the spaghetti squash in a 9x13” pan and top with half of your tomato slices.
Then sprinkle with salt, garlic powder, onion powder, and Italian seasoning.
Spread one cup of cheese on top, and repeat the layers once more (squash, tomatoes, spices, cheese). Bake for 30 minutes at 350 degrees.

Squash and Tomato Casserole
Ingredients:

medium spaghetti squash, cooked (about 3 cups)
2 large tomatoes, sliced
Salt
Garlic powder
Onion powder
Italian seasoning
2 cups shredded cheese
Steps:

Preheat oven to 350 degrees.
2. Cook your spaghetti squash and spread half of the
squash in a 9x13” pan. Top with half of your tomato slices and
sprinkle with salt, garlic powder, onion powder, and Italian
seasoning. Then spread 1 cup of shredded cheese on top.
3. Repeat the layers: squash, tomatoes, seasonings,
and cheese. Then bake in oven, uncovered, for 30 minutes.
